Hello World! Welcome Friends! Once Spring makes an appearance, I begin to want lighter foods than the heavier fare that seems to come with the cooler months. Anything that is cool and has a bit of a crunch is fine by me. The other day, I had a craving for a salad, but I didn’t want the usual ones I normally eat. So, off to the internet for a search and the discovery of this delicious and extremely easy to make recipe for Strawberry Spinach Salad with Strawberry Dressing. My family loves berries and especially strawberries; so I always have some on hand. I did substitute pine nuts, because number one, I love them and number two, someone (Greg) ate all of the pecans and I didn’t feel like going to the store! Let’s do a quick rundown of the ingredients. You’ll need strawberries, red onion, spinach leaves, mixed greens (I didn’t have these on hand; so I doubled up on the spinach), pecans and feta. The dressing calls for strawberries, maple syrup, apple cider vinegar, olive oil and kosher salt. Note, I pulled the butter, honey and cinnamon out to make honey glazed walnuts after I realized I didn’t have pecans. After I took the picture below, I spied the pine nuts and changed up the recipe, because I seriously love pine nuts.
Such a gorgeous salad! The red onions mixed with the strawberries is such a delightful taste.
The strawberry vinaigrette is simple perfection and has just the right amount of sweetness.
I do want to try it with the pecans. The pine nuts were quite delicious and added that bit of crunch.
Strawberry Spinach Salad with Strawberry Dressing
Equipment
- 1 Immersion Blender or Standard Blender
Ingredients
Strawberry Vinaigrette Salad Dressing
- 1 1/2 cups sliced strawberries
- 2 tbsps maple syrup
- 2 tbsps apple cider vinegar
- 1/4 tsp kosher salt
Strawberry Spinach Salad
- 1 cup sliced strawberries
- 1 handful sliced red onion
- 5 cups baby spinach leaves
- 3 cups mixed greens
- 1/4 cup chopped pecans
- 1/4 cup feta cheese crumbles
- 1/2 cup Strawberry Vinaigrette Salad Dressing
Instructions
Make the strawberry salad dressing
- In an immersion blender, small blender or standard blender, blend all ingredients until smooth. (An immersion blender and small blender are the quickest, but you can also use a standard blender: just blend for a few minutes until fully combined.)
Prepare the salad ingredients
- Slice off the tops of the strawberries, then slice them long-wise. Thinly slice the red onion. If necessary, wash the spinach and mixed greens. Chop the pecans and toast them to enhance the flavors.
Serve
- Place the greens on plates and top with all ingredients, then drizzle with the strawberry vinaigrette salad dressing (about 2 tablespoons per serving). Refrigerate the remaining dressing for up to 1 week.
