Hello World! I hope all are happy and well this fine Wednesday. Back in August, my sweet blogging friend Nici from Posed Perfection shared this recipe that had me at pine nuts. I love pine nuts…maybe a little too much.
Anyhoo, when we had a family party for The Dedicated Husband’s birthday, I thought what a great time to try this out. I also tried out several other recipes as well which I will be sharing in the next couple of weeks.
Pasta with Spinach, Pine Nuts, and Feta
Ingredients:
1 Tbsp. butter
8 Tbsp. olive oil
1/3 cup pine nuts (I used way more to satisfy my love for them)
5 garlic cloves
2 10oz. packages frozen, chopped spinach (thawed and drained)
4 large roma tomatoes, finely chopped
12 oz. tub crumbled feta cheese
2 16oz. boxes of penne pasta
Directions:
Cook the pasta according to the package directions. Melt butter with 2 Tbsp. oil. Saute pine nuts and garlic until light brown. Add the spinach and the finely chopped tomatoes and heat through. Place cooked pasta in a serving dish, add remaining oil and toss. Pour the spinach/pine nut mixture over pasta and toss. Add the feta cheese, season with salt and pepper to taste. Serve immediately with Parmesan cheese.
Do you notice what is missing? Parmesan cheese. I couldn’t wait to eat this, so I grabbed my camera, snapped a couple of shots and then snarfed it down. Then I realized, that I had forgotten the parmesan cheese. If you are itching to see a pic with parmesan cheese, head on over to Posed Perfection. Gosh, this sounds nice! I love penne, not least because I try to fit one on each of the tines of my fork! The pine nuts and spinach sound wonderful together, like a deconstructed pesto. Thank you for sharing!
