Hello World! Do not let the title fool you, my Quesadillas are not loaded with bad things, but with the good and healthy ones we should be putting in our body. You know, new year, new habits to be reinforced.
Loaded Chicken Quesadillas
***Please note, this recipe is for 1 quesadilla. Please change measurements for your preference.***
3 oz. chicken breast
Taco seasoning to taste
1/4 oz. part-skim mozzarella cheese, grated
1/4 oz. low-fat cheddar
1 oz. black beans
Onion, sliced
Red pepper, sliced
1 6-inch whole wheat low-carb tortilla
1/4 cup Mexican salsa
Chopped cilantro to taste
Directions:
Season the chicken with the taco seasoning and grill. Chop up some onion and red pepper. Place in a saute pan with a little olive oil, season with taco seasoning and saute. Chop the grilled chicken, put it in another saute pan, and add the cheeses and beans. Cook until heated through. Sprinkle cilantro on top.
Place the mixture on one whole wheat tortilla. Cover with another tortilla and place on a cookie sheet. Broil for about 1 to 2 minutes. Remove, slice and enjoy with your favorite Mexican salsa on the side.

Sounds perfect, I think black beans make everything really taste smooth and yummy, they just get a bad rap because they sound healthy! They are delicious!
