Hello World! Welcome Friends! Summer is in full swing with soaring temperatures which has us looking for ways to cool down. During the Summer I love to try new salad recipes since we love a good, cool salad around here on super hot days. Recently, I was perusing The Pioneer Woman website and came across this recipe for Cucumber Tomato Salad with Creamy Herb Dressing (which they shared from A Farmgirl’s Dabbles)and I just knew it was going to be delicious! And, let me tell you, it was! Also, it was super easy to make and didn’t really take much time at all. So, if you need a new Summer recipe to mix things up, give this refreshing salad a try. You might like it so much so that you will want to add it to your Summer Salad rotation. If you do try it, please let me know in the comments below.
Cucumber Tomato Salad with Creamy Herb Dressing
Cucumber Tomato Salad with Creamy Herb Dressing
Ingredients
- 3 English Cucumbers Sliced in half lengthwise and then sliced 1/4 inch thick
- 2 cups Halved Grape Tomatoes
- 3/4 cup Finely Chopped Red Onion
- 1 cup Plain Greek Yogurt
- 2 tsp Rice Vinegar
- 1/2 tsp Sugar
- 1/4 tsp Dry Mustard
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- 1/4 tsp Kosher Salt
- 1/4 tsp Black Pepper
- 4 tbsp Chopped Fresh Dill
- 2 tbsp Chopped Fresh Mint
- 2 tbsp Chopped Fresh Italian Parsley
Instructions
- Add cucumbers, tomatoes, and onion to a large bowl. If you don't like the skin of cucumbers, feel free to peel them prior to slicing.
- In a medium bowl, stir together the remaining ingredients to create the dressing. Pour over the cucumber mixture and fold gently to combine. Place salad in a serving bowl, sprinkle with a bit more black pepper, and serve immediately.
- This can be prepared many hours in advance, or even the day prior to serving. Just store the cucumber mixture and dressing mixture in separate containers in the refrigerator, combining them just prior to serving.
In other news, the arch window shutters should be arriving towards the end of the week which I’m super excited about! I’ve decided that I don’t really like the mirror I purchased for the Study; so I’m trying to find another one. Also, I’m looking for a piece of art to go above the piano. We had originally hung one of my old pieces that I bought from Kirkland’s a long time ago. My tastes have changed and I just don’t like it anymore. So, hopefully I can find a new mirror and artwork soon and get them hung. Then I can finally show you the Study!!!
For the laundry room, we are waiting on a new dryer to be delivered and I need to finish painting the door that leads from the closet into the laundry room. It is so nice to have the laundry room so close to the primary closet! No walking across the house with loads of laundry!
