Hello World! Welcome Friends! The season to put on an apron and experiment in the kitchen is here. It’s time to get your hands dirty, put a smile on your face, and go grocery shopping. You might be a little rusty or a beginner when it comes to cooking, but don’t fret!
The following recipes are for you to have fun with and discover that cooking is a skill everyone should practice once in a while. You may feel learning to cook is like when do kids learn to read, but be patient with yourself. Nobody turns a chef overnight in spite of what your favorite cooking show may be showing.
Accidents will happen, dishes will need attention, and there might even be some mistakes. Be prepared to spend the rest of your evening having fun in the kitchen. And, for a little snack, Mid-Day Squares can help with cravings. Let’s get cooking!

Cheese Lasagna
Cheese, cheese, and more cheese. Isn’t the prospect of layering cheese, pasta, and tomato sauce you’ll eat in an hour enough to convince you to cook?
Lasagna is an Italian dish that remains a family favorite.

Ingredients:
- ½ teaspoon sea salt
- Black pepper
- Olive oil
- 1 egg
- 3 cups tomato sauce
- 1 package lasagna noodles
- 2 cups mozzarella cheese (grated)
- ¼ cup Parmigiano-Reggiano (grated)
- 1 cup ricotta cheese
Prepare:
Preheat the oven to 375 degrees and coat a thirteen by nine inch baking dish with olive oil. Before preparing any sauce, you’’l first cook the lasagna noodles according to the package instructions. When cooked, rinse the lasagna under cool water and set the pasta flat.
Now to the sauce: combine ricotta cheese, mozzarella cheese, egg, salt, pepper, and Parmigiano-Reggiano in a bowl.
Get the baking dish and spread a layer of tomato sauce before laying three to four lasagna noodles over it. Use one-third of tomato sauce over the noodles, followed by ricotta cheese, and mozzarella cheese. Easily enough you’ll repeat this process until you run out of the ingredients.
Put the pan in the oven and bake the lasagna for forty-five minutes and once it’s ready, take it out and let it cool for ten minutes.
Serve the lasagna and pair it with a good glass of red wine and say hello to a peaceful evening.
Toasted Ravioli
Okay, so Autumn season might not include dishes that are rid of carbs, but every once in a while indulging your cravings for pasta is perfectly fine.
Ravioli is another Italian dish that can be served with whichever pasta you have in the fridge. But, have you ever had toasted ravioli?

Ingredients:
- Vegetable oil
- ¼ cup parmesan cheese (freshly grated)
- ½ cup whole milk
- Marinara sauce
- 1 teaspoon black pepper (freshly grounded)
- 1 teaspoon salt
- 1 pound package frozen cheese ravioli
- 1 cup Italian crumbs
- 2 eggs
Prepare:
Folks don’t sweat it. These tasty toasted ravioli take an hour, trust the process, it’ll be worth your while.
Whisk together eggs and milk in a bowl and in another add the Parmesan cheese with the bread crumbs, seasoning it with salt and pepper.
Dip ravioli in the egg mixture and then on the bread crumbs. Make sure to press to coat.
Over medium heat, heat marinara sauce in a large saucepan until it starts bubbling and reduce it to simmer.
Heat oil in a large pot over medium heat until it simmers. Be ready with batches and fry ravioli for three to four minutes, flipping along the way until the pasta is cooked. The ravioli should look golden.
Have paper towels ready and lined on a plate. Sprinkle some Parmesan and serve with marinara sauce.
All done! Include a side salad to your meal or enjoy them as a snack.
Desserts
Autumn isn’t complete without a little dessert. You know you want something sweet in your life. For those special occasions that call for a delicious dessert, ease your cravings a bit.
Pumpkin Muffins
Most people enjoy chocolate muffins with a nice glass of milk or cup of coffee. It’s not uncommon to enjoy macadamian muffins, but few have tried the magic of pumpkin muffins.
Eat them freshly baked out of the oven or freeze them to later serve them with ice cream. Whatever your preferences, turn on that oven and get ready to bake.

Ingredients:
- ½ cup vegetable oil (optional)
- ¼ cup milk or dairy-free milk
- 1 ¼ cups granulated sugar
- ¾ teaspoon salt
- ½ teaspoon nutmeg
- ¼ teaspoon ginger
- 1 ½ teaspoons cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup water
- 2 eggs
- 1 ½ cups all-purpose flour
- 1 cup pumpkin (fresh or canned)
Prepare:
These delicious pumpkin muffins will take approximately thirty minutes for you to prep and cook. First, preheat the oven to 350 degrees. Use paper liners to cover a 12-cup muffin pan and start mixing together the ginger, cinnamon, nutmeg, flour, baking powder, baking soda, and salt in a bowl.
Then, in another bowl, mix the eggs, water, sugar, oil, and pumpkin. Combine both mixtures in one single bowl and now you’re ready to start dividing the batter into the 12-cup muffin pan. Bake the muffins in the oven for twenty to twenty-five minutes and viola!
But wait…let your muffins cool for a few minutes. You can store them in containers or eat them on the spot.
For something sweeter and if you are a chocolate lover, add chocolate chips to this recipe. Or, decorate your muffins and top them off with powdered sugar. If you’re allergic to any or all of the spices (cinnamon, nutmeg, or ginger), replace them with pumpkin pie spice.
Caramel Apple Pie
What list of Autumn desserts is complete without including apple pie? This recipe, however, comes with a twist.
Savor apple pie with the flavor of caramel and make it your go-to dessert this Autumn season.

Ingredients:
- ¼ cup all-purpose flour
- ½ cup cup butter
- 2 tablespoons milk
- 1 teaspoon cinnamon (ground)
- 5 cups apples (sliced & peeled)
- ½ cup brown sugar
- ½ cup caramel apple dip
- 1 package pie crusts
Prepare:
Follow the directions in the pie crusts package or box and use a nine-inch glass plate. Eat the oven to three-hundred seventy-five degrees and in a large bowl combine the sugar with the flour and cinnamon.
Then, add apples. In another large bowl add the milk and dip, drizzle over the apples.
Combine flour and sugar in a medium bowl and mix, sprinkling over the filling. Cut the strips and place them on top of the filling in the pie plate. You’ll bake the pie for fifty to sixty minutes and let it cool for several minutes.
After, drizzle the dip over the pie and let it cool for two more hours.
When it comes to apple pies, the wait is important.
