Hello World! Welcome Friends! I don’t know about you, but after the holidays, I really crave warm and hearty soups. So, it seems that every January I begin the hunt for new soup recipes to try. The other day I was organizing some magazines that I’ve kept through the years for various reasons. I came upon the November/December 2013 issue of Victoria magazine which has a gloriously decorated Christmas tree on the cover. That of course was enough for me to open the magazine and have a look through. That is when I discovered the Roasted Cauliflower and Parsnip Soup and Clover Leaf Roll recipes. Greg is following the Keto diet and has lost about 21 pounds so far. So, when looking for new recipes to try, I try to keep his Keto plan in mind. The Clover Leaf rolls are for me and Chloe. Ha.
Roasted Cauliflower and Parsnip Soup and Clover Leaf Rolls
Doesn’t it look delish? I made the soup and rolls over the weekend, and boy they were so good. Now, keep in mind, the soup leans toward a sweet soup. The parsnips really give it a sweet flavor. So, when I serve it again, I will not use it as a main dish. More like a small starter soup. I wouldn’t serve it in a bowl, but a small cup. So, if you make it, keep that little tidbit in mind. Also, it is very Keto friendly.

Love this recipe – found ourselves with an excess of parsnips, and we always have frozen cauliflower in stock, so this was an easy dinner for us. A real Winter warmer. Thanks!
